This is firefox from a remote machine?
We'll have to check the requirements for jquery mobile 1.3:

Perhaps it's HTML5? I can probably downgrade jquery mobile to see if that helps.

Aha - making sideways progress now! Remote PC (which is also the file server) has pretty ancient browsers on it. I put Chrome on it and that works. So it would seem that it is not a network/firewall issue, but maybe a Safari problem after all.
EDIT - BTW it is a 4g iPod touch with iOS 5.0

iOS 5 would seem to be supported - however its probably worth trying to upgrade.

Easier said than done - with my slow and unreliable broadband connection, the download takes at least 2 hours and the mean time between router resets is about 1 hour. Coupled with the fact that iTunes does not resume if you lose the connection and you have to start over (don't you love it), this means that I am now on the 5th attempt at downloading 850mb.

I'd downgrade jquery mobile for you but it doesn't look like the requirements for 1.2 are much different:

Gave up with iOS6 and decided to download the Chrome app. Unfortunately the result is exactly the same!

Well it seems like its just the two people that have tried it so it has a 50% success rate so far!

Did you try the jquery mobile 1.3 test drive pages from IOS5?

It does seem pretty odd.
Here's what we know.
Works in Chrome on remote PC, but not Firefox (old version).
Doesn't work in Safari or Chrome on iPod.
Jquery works ok on iPod (never had any problems with it before and the demos work).
The screen on the iPod and Firefox looks the same (see pic below), although the error messages are slightly different (they both refer to jquery, but this may be a red herring).
It looks like a css problem, but functionality missing as well as layout.
Player controls and config radio buttons work, but the rest doesn't.
